Determination of carotenoid composition of large-fruit pumpkin type by spectrophotometry and thin-layer chromatography methods

Abstract
In this work, using spectrophotometry and thin-layer chromatography, it was established that domestic varieties of large-fruited pumpkins contain carotenes and xanthophylls. It was determined that β-carotene is present in all the studied varieties. Moreover, its content was identified in all parts of the pumpkins. However, α-carotene is contained only in two varieties. It was shown that the color of the pumpkin affected by the content of such carotene as lycopene. Of all the samples studied, lycopene was identified only in one variety. It was found that all the studied pumpkin samples contain xanthophylls both in the peel and in the pulp. Lutein was identified in all parts of the studied pumpkin varieties. It is suggested that all the studied pumpkin varieties can be raw materials for the extraction of carotenoids
